Another restaurant will soon close in Chicago. This time it’s Trio, the Evanston restaurant that was the starting point for some of the city's biggest name chefs and underwent a dramatic makeover in 2004 from fine dining to casual. The reason for this is the restaurant owner’s Henry Adaniya decision to focus on restaurant consulting and service training, work he has dabbled in recently. The last day you will be able to dine here will be February 25.
Since opening in 1993, Trio has amassed awards and recognition as one of the area's most innovative restaurants and a breeding ground for talented young chefs. But probably the turning and risking point for the restaurant was when it was decided to turn it into a casual one, when the décor was redid and instead of a lengthy tasting menu that could run $200, there appeared menus that didn't exceed $20.
